Crockpot Chicken Quesadillas

I love a good meal you can put in a crock pot and not think about until dinner time.  It is especially nice not to have to turn the oven on during the summer.  This is a good one!

Crockpot Chicken Quesadillas

3-4 chicken breast, frozen
14 oz can Rotel Mexican (with lime juice and cilantro)
8 oz cream cheese, room temperature
salt and pepper to taste
2 cups Mexican blend cheese
1 pkg uncooked flour tortillas by TortillaLand

In a small bowl whisk rotel with cream cheese
Grease crock pot and place frozen chicken in the bottom
Pour cheese mixture over chicken
Cook on high for 4 hours or low for 6 hours
Shred chicken and add salt and pepper to taste
Place two tortillas on a heated griddle and lightly brown both sides
Spread chicken mixture and a handful of shredded cheese on one tortilla
Cover with second tortilla and warm for 1-2 minutes until cheese is melted
Remove from griddle and cut into four triangles with pizza cutter and serve

I'll definitely have to try this sometime this week. I just never have those fancy ingredients in my kitchen. Rotel Mexican? Green Chiles? I know... my poor family always has to suffer from it too! :-)
