Creamy Tomato Tortellini Soup

I know it's still hot outside for some of us, but I saw this recipe on Pinterest and had to try it and we really liked it.  I'm sure we will be having this often this fall and winter.


Creamy Tomato Tortellini Soup
Adapted from {Mrs. Schwartz's Kitchen}

2 Tbl Olive Oil
2 tsp Minced Garlic
2 Tbl Sun Dried Tomatoes, chopped
1 tsp Onion Powder
1 Tbl Italian Seasoning
2 (10 3/4 oz) Cans of Condensed Tomato Soup
2 cups Half-and-half
2 cups Chicken Stock
1/2 tsp Salt
1/2 tsp Pepper
1 (9 oz) bag Of Cheese Filled Tortellini

Directions
Saute garlic with the olive oil and sun dried tomatoes, onion powder, and Italian seasoning in a large stock pot over medium heat.
Add tomato soup, half and half, and chicken stock and bring to a simmer.
Once simmering, drop tortellini into the soup.
Cook according to the package directions.

can not find sundried tomato paste in my shoprite, will using regular tomato paste make a huge difference in taste?

It will have a different flavor if you use regular tomato paste, but I think it will still taste really good!

This was good and easy to make! I did use only 1/2 of a garlic clove and used less half and half, subbed milk. Will make it again and tweak it a little more to suit my family.

So good! I didn't have tortellini so I used penne. Also, to add a healthy factor, added spinach. Wish the sauce was slightly thicker, but still amazing flavor!

I couldn't find sundried tomato paste either. So I used "Candoni Sun Dried Tomato Pesto". Was amazing!

Yes, you can use fresh or frozen tortellini.

do you think it would make a difference if I used chicken broth instead of stock? I don't have stock on hand, but I know there is a little bit of difference in the way they cook up.

I have not cooked a lot with chicken broth, so I'm not sure what difference it would make.

Great recipe! Fast simple & very tasty. Love the sundries tomatoes. We're trying to cut calories so I subbed skim milk for the half n half it was still super creamy tasting. We have similar recipe that wilts spinach in at the end might try that next time.

I made this today in the crockpot, it was delicious!!! I just put all ingredients in and cooked it on high for about 3-4 hrs.

This is a good base recipe to doctor up and make your own. I added 1/4 cup each finely chopped carrot and celery in with the garlic and also a tbsp. of my homemade pesto at the end. Delicious.

The recipe needed some tweaks for me since I'm allergic to chicken. I sauteed the tomato paste and garlic in the olive oil. I used two boxes of pacific creamy tomato soup(It's what was in the pantry), added a cup of cream, I added onion powder, garlic powder, dried basil, and some other dried Italian spice/herb mix. Brought it up to a simmer and added two packages of tortellini. It was AMAZING!!!

Next time I make it, I'm thinking of adding some roasted vegetables to add to it. You could even add Italian sausage tortellini if you are a meat eater.

I made this tonight and it is DELICIOUS!!! The only thing I changed was using 1/2 cup chopped onion instead of the powder. It was so simple and quick, which is what I prefer. I will make this over and over again.

Made this tonight...YUM! I have always loved tomato soup since I was a kid, but adding the sun dried tomatoes and tortellini totally kicked a childhood favorite up a notch!!! Bonus- my kids loved it, too! It was easy, and I made it exactly as directed. Would not change a thing! Can't wait to have leftovers =)

This was spectacular! It was something both my husband and I liked and sometimes that can be difficult to find. We cut the recipe in half because we didn't know how much it would end up making but we ended up eating all of it with no leftovers, definitely will be making the full thing next time! Also, it's great because I can buy a big bag of frozen tortellini and then use what I need for this and then also for tortellini and alfredo sauce! :)
I am making this for dinner tonight, only I'm not using the tomatoes.. I hope it still turns out ok! :)

Made this tonight with more soup, stock and seasonings so it would go farther. Added a little cayenne for heat and one of my basil cubes along with parmesan.... It was very good...

I am a tomato hater and would never have eaten tomato soup! Yuck!! The curiousity got the best of me, so I made this, including the sun dried tomatoes. OMG!!!!! It is wonderful. I am making it for the second time today. So......even if you are also a tomato hater, give it a try. You'll be glad you did.

I made this last night for my husband. His words were "Best soup I think you've ever made." I'm so excited about it that I have already forwarded the recipe to my mom & several friends. The only thing I did differently was used chicken broth instead of stock & replaced the salt with garlic powder. DELICIOUS! Thanks for the recipe!!

Made this tonight since it was our fist really chilly day and it was amazing! I didn't use the condensed soup, I mixed up my own base with tomato sauce, sugar, salt and cornstarch. It was perfect! All the flavors blended nicely. My husband said it was "restaurant quality".

So I made this tonight and it was delicious. I don't like tomatoes so left out the Sun-dried but the ingredients above don't list the paste but I know I bought paste for this so I must have seen it somewhere. I just didn't add any paste and it was fine but is the 2TBS of sun-dried tomatoes supposed to be the paste or is the paste in addition to that? Thanks

Yes Abby, you can use the paste. I have never tried it though.

I love this recipe!!! I'm going to try adding a bit more chicken stock to make it thinner. I've also substituted vegetable stock when I didn't have enough chicken and always use fat-free half and half.

Yes, you can use regular milk. It may not be as thick and you might loose a little of the creaminess. But you wont lose any flavor!

Where do you find the sun-dried tomatoes in the grocery store? Is it a paste like everyone is saying in the comments or is it like a spice? Thanks for your help!

@Ashley I have found the sun-dried tomatoes in a jar in the isle with the canned tomatoes. You just remove a few and chop them. I have not used the paste before.

Just made this and it was so amazing! Added Texas toast croutons on top of soup, so yummy! Omit the salt if you use any tortellini with cheese ( I used spinach and ricotta and didn't need any salt at all! )

This was a great recipe! So easy to make, and it was good but would have been AWESOME if I had actually followed the recipe :( I made a big mistake and used a cup of beef broth instead of chicken before I realized what I was doing. I tried to salvage it by adding a cut of water instead of the second cup of broth, then added an extra can of soup, an extra cup of half&half, and a can of tomato sauce. It still tasted pretty beefy and unfortunately overpowered the creamy tomato flavor. My husband still loved it and I thought it was ok, but now I know for next time that beef and chicken broth are NOT interchangeable! Lol

For those of us price-conscious, the sundried tomato paste can be excluded with very little change in taste :)

The paste is $5 at my grocery store and it's half a tube for the recipe. I have no other uses for sundried tomatoes so I wouldn't buy the jar.

Fabulous! Loved this soup, such a creamy delicious change from standard tomato soup. I have made this several times. I use a can of chopped stewed tomatoes instead of sun dried tomatoes. I always double the recipe so we can enjoy it for several days!

love this recipe! I made a few minor tweaks. I absolutely hate sun dried tomatoes so I add in 2tbls to half a can (6 oz can) of tomato paste (judge based on your tadtebuds). I also add a pound of ground meat and half the amount of noodles (we like it better with less noodles)
