A wonderful weeknight or anytime meal. It is fresh and full of flavor.
8 oz Penne Pasta
2 cups fully cooked ham, cubed
1 large Red or Orange Sweet Pepper, chopped
1 medium onion, chopped
1 Tbl dried parsley
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 cup olive oil
2 Tbl butter
1 or 2 garlic cloves, minced
2 cups chicken broth
1 Tbl lemon juice
1/2 cup shredded Parmesan Cheese for garnish
Cook Pasta according to package directions.
Saute ham, red pepper, onion, garlic, parsley, basil, and oregano in oil and butter for 4-6 minutes or until vegetables are tender.
Stir in broth and lemon juice.
Bring to a boil.
Reduce heat and simmer uncovered for 20-25 minutes or until liquid is reduced by half.
Drain pasta and stir into ham mixture.
Sprinkle with cheese to garnish.
