Dilly Dip

This recipe is special to me.  My mom would always make this and serve it with a big platter of fresh veggies in the summer months.  It is my favorite dip to eat with vegetables because it tastes so light and fresh!

1 cup sour cream
1 cup mayonnaise
2 Tbl finely diced onion
1 1/2 Tbl dill
1 Tbl Beau Monde seasoning

Directions
In a small bowl combine sour cream and mayonnaise
Stir in onion, dill and Beau Monde seasoning

Cordon Bleu Casserole

This is my FAVORITE dinner.  You are gonna want to try this one!


Cordon Bleu Pasta
Adapted from {Chef In Training}

12 oz penne pasta
2 cups heavy cream
1 cup milk
1 (8oz) block cream cheese
8 oz swiss cheese, shredded
1/2 tsp garlic salt
1/2 tsp onion powder
1-2 chicken breasts, cooked and cubed
6-8 bacon slices, cooked and crumbled
1 cup ham, cubed
3/4 cup plain Panko bread crumbs
1 Tbl butter, melted

Directions
Cook pasta according to package directions and drain
In a small pot, heat heavy cream and cream cheese over medium low heat
Whisk together until  cheese is melted
Stir in garlic salt and onion powder
Add shredded swiss
Again, whisk together until cheese is melted and sauce is smooth
In a 9x13 pan place noodles, chicken, ham and bacon
Pour sauce over top and lightly stir
In a small bowl or ziploc bag mix bread crumbs with butter
Sprinkle top with bread crumbs
Bake at 375 for 20 minutes until heated through and top is light brown

Crockpot Sesame Chicken

With it being summer, I am always on the look out for a good meal that does not require turning on the oven.  This one was simple and tasted great.  I know we will be having it again sometime soon.


Crockpot Sesame Chicken

1/2 cup honey
1/4 cup soy sauce
2 Tbl dried onion flakes
2 Tbl ketchup
1 Tbl sesame oil
1 tsp garlic, minced
3 Boneless Skinless Chicken Breast, thawed
2 tsp cornstarch
3 Tbl water
2-3 cups cooked white rice
1-2 Tbl sesame seeds

Directions
Place honey, soy, onion flake, ketchup, oil and garlic in crockpot and stir to combine
Lay in chicken breast and cook on low for 4 hours OR high for 2, turning chicken half way
Remove cooked chicken from crockpot and set aside
Stir water and cornstarch together and add to sauce in crockpot
Let cook on high for additional 10 minutes to thicken
Cut chicken into strips or chunks and return to sauce in crockpot
Serve chicken and sauce over rice
Use sesame seeds to sprinkle on top

Grasshopper Ice Cream Pie

A great way to beat the heat, and the best part...you really can choose any ice cream or flavor Oreo cookies you want!  The combinations are endless.


Grasshopper Ice Cream Pie

2 cups (approx. 22-24) Oreo cookies, crushed
4 Tbl butter, melted
1 ctn mint chocolate chip ice cream, softened
6-8 Oreo cookies, coarsely chopped
1 jar fudge sauce
1 ctn whipped topping

Directions
*Soften half the ice cream
In a small bowl mix crushed Oreo cookies with butter
Press in the bottom and half way up the sides of pie plate or 8x8 baking dish
Spread the softened half of ice cream on top of crust
Layer chopped cookies with fudge sauce on top and freeze at least 1-2 hours
*Soften the remaining ice cream
Place softened ice cream on top of fudge and cookie layer and freeze again until set
Top with extra fudge and whipped topping

*You can soften the ice cream by setting it aside in a bowl to thaw until desired consistency or you can microwave it in 15 second intervals until desired consistency.
