Sweet Potato Casserole

This is my absolute FAVORITE side dish for Thanksgiving!

Sweet Potato Casserole

3 large sweet potatoes/yams, pealed and cubed
1 c sugar
1 tsp salt
1 tsp vanilla
4 eggs
1 cup evaporated milk
1/2 c butter

Boil sweet potatoes, drain and mash
Tip:  Instead of boiling, steam them in Ziploc steam bagsIt is so much quicker and one less dirty pot.  Not to mention it will also keep out the extra moisture.
Mix potatoes together with sugar, salt, vanilla, eggs, milk & butter.
Pour into a greased 9x13 baking dish.

1 c brown sugar
1 1/2 c flour
1 c pecans
1/3 c coconut
1/2 c melted butter

Mix together until crumbly.
Place on top of sweet potatoes and bake at 350°F  for 30-40 minutes
Instead of topping, bake sweet potato mixture 30 minutes
Then top with miniature marshmallows
Put back in the oven under broiler until marshmallows are lightly browned.
